Slow Cooked Chipotle Glazed Pulled Pork Sandwich
Ingredients:
- 1kg Pork butt
- Favourite BBQ Rub
- 1 Bottle of Alderson’s Chipotle Pepper Sauce
- 2 cups Chicken Stock
- 1 Bottle of Morepork Smoky BBQ Sauce
- 4-6 Burger Buns
- Sliced Pickles
Method:
Remove the pork from its packaging and pat dry with a paper towel. Using your favourite BBQ rub, season the pork liberally on all sides.
Pop your instant pot onto the sauté setting, and sear the pork butt all over, building good colour. Remove from the pot and set aside.
Deglaze the pot with Alderson’s chipotle hot sauce, scraping the fond from the bottom of the pot. That’s next-level flavour!
Next add the stock, stirring to combine, then return the pork back to the pot.
Place the instant pot lid on, and set to high pressure for 40 minutes. When finished, naturally release the pressure before opening.
Remove the pork from the pot on to a tray, and using your hands or a pair of forks shred the pork into nice long strands.
Once pulled, add the Morepork BBQ Sauce, (leaving a little for the sandwich’s) and a ladle of cooking liquid. Using your hands, gently combine the sauce with the meat.
To build the sandwich’s , drizzle the toasted bottom buns with bbq sauce, followed by a good pile of pulled pork. Top with pickles, hot sauce, and don with the top toasted lids.
